Jumbo Flat Cekodok/Banana Pancake.

Is this another Franken dessert?
Beyond the cronut, this Pancekodok is crispy on the outside, fluffy on the inside~

What you need:

250-300g Very ripe bananas

1Tbsp Sugar

50g Rice flour 

50g Wheat flour 

1 Tbsp Honey

Pinch of Salt

300ml Oil

 

How to: 

  1. Cut the bananas into slices and mash in a bowl.

  2. Mix all ingredients except sugar & honey gradually into the mix. 

        Add the sugar & honey into the batter 

        shortly before frying. 

        This is to ensure the crispiness of the

        batter.

        Also, adjust the sweetness accordingly.

  1. Heat oil over medium to high heat.

  2. Put a spoonful or two (depending on how big you’d like it to be) of banana mixture into the hot oil and allow it to sink.

  3. Fry until golden brown.

Stack them up and Bon Appétit!
